I work very hard on finding good characters who can explain things to me, and I use them to help tell the story. I organize my pieces not just around people but around animals and plants, energy flows, the path that carbon takes through the food system.

Meat is a tremendous environmental challenge. It contributes enormous amounts of greenhouse gas, especially beef eating.

Corn is an efficient way to get energy calories off the land and soybeans are an efficient way of getting protein off the land, so we've designed a food system that produces a lot of cheap corn and soybeans resulting in a lot of cheap fast food.

Avoid food products with more than five ingredients; with ingredients you can't pronounce.

For we would no longer need any reminding that however we choose to feed ourselves, we eat by the grace of nature, not industry, and what we're eating is never anything more or less than the body of the world.

We are what we eat, it is often said, but of course that's only part of the story. We are what what we eat eats too.

More grass means less forest; more forest less grass. But either-or is a construction more deeply woven into our culture than into nature, where even antagonists depend on one another and the liveliest places are the edges, the in-betweens or both-ands..... Relations are what matter most.
