  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • 1 oz dark chocolate (70% cocoa or higher), finely chopped
  • Salt and pepper, to taste
  • Fresh cilantro and sour cream, for garnish

Directions

Sauté the Base Ingredients

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, until softened and slightly caramelized.
  • Add the minced garlic and diced bell pepper, cooking for another 2-3 minutes until fragrant.

Brown the Meat

  • Increase the heat to medium-high and add the ground beef. Cook until browned, breaking up any large chunks as it cooks. Drain any excess fat if necessary.

Build the Flavor with Spices and Tomatoes

  • Stir in the chili powder, cumin, smoked paprika, and cinnamon, coating the beef and vegetables with the spices. Cook for 1-2 minutes to bring out the spices’ aroma.
