The Chinese five-spice works really well in the quantity that I used. It makes it almost imperceptibly just a little bit sweeter without making it really sweet or really even that Asian flavored.
Mario BataliI don't think fine dining is dying, but I think those rare occasions when you really want the fanciness are diminishing... I think a lot of people are going to find simpler, more casual ways to enjoy an experience.
