  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley for garnish

Instructions

1. Brown the Beef:

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat in batches, browning it on all sides. Remove the beef from the pot and set it aside.

2. Sauté the Vegetables:

In the same pot, add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.

3. Deglaze the Pot:

If using, pour in the red wine and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pot.

4. Add the Broth and Seasonings:

Return the browned beef to the pot. Stir in the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaves, salt, and pepper.

  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.

5. Add the Potatoes:
