  • 1 teaspoon salt
  • 2 tablespoons butter

For the Egg Butter (Munavoi):

  • 4 hard-boiled eggs
  • 1/2 cup butter, softened
  • Salt to taste

Instructions

1. Prepare the Rice Filling:

  • In a large saucepan, combine the rice and water. Bring to a boil, then reduce the heat and simmer until the water is absorbed.
  • Add the milk and continue to cook over low heat, stirring frequently, until the rice is soft and the mixture is thick and creamy, about 30-40 minutes. Stir in the butter and salt, then set aside to cool.

2. Make the Rye Crust:

  • In a mixing bowl, combine the rye flour, all-purpose flour, and salt. Gradually add the cold water, mixing until a firm dough forms.
  • Divide the dough into small balls, about the size of a golf ball, and roll each ball into a thin oval or round shape on a floured surface.

2. Assemble the Karjalanpiirakka:

  • Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Place a spoonful of the rice filling in the center of each dough round, spreading it out but leaving the edges uncovered.
  • Fold the edges of the dough over the filling, pinching them together to form a decorative border around the filling. The center of the pie should remain exposed.
  • Place the assembled pies on the prepared baking sheet.

3. Bake the Karjalanpiirakka:

  • Bake in the preheated oven for 10-15 minutes, or until the crust is firm and lightly browned.

4. Make the Egg Butter (Munavoi):

Mash the hard-boiled eggs with the softened butter until well combined. Season with salt to taste.
