  • 4 tablespoons all-purpose flour
  • 2 cups milk, warmed
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Eggplant:

Preheat your oven to 400°F (200°C). Arrange the eggplant slices on a baking sheet, brush both sides with olive oil, and sprinkle with salt.

3. Prepare the Béchamel Sauce:
